Uji Kandungan Albumin Ikan Gabus (Channa striata ) dalam Perbedaan Lingkungan Air (Albumin level Test of Snakehead Fish (Channa striata) in different salinity Environment )

Abstract
Snakehead or kuthuk fish needed to be cultivated through technological engineering methods so as to minimize the wild capture of the current rampant. Snakehead had more albumin protein than other fish. As a source of albumin, Snakehead could be an expensive alternative to albumin. This study aimed to determine the level of Snakehead albumin as well as compared between brackish water fish Maduran Lamongan District and fresh water Yosowilangun Lumajang District. The research method was an experimental research with purposive sampling and analysis technique of mean of two populations. This study used snakehead samples. Repeat 3x and two at each position of samples of meat samples near the heads and tails. Precipitation of albumin using 10% NaOH to increase pH up to 11.5; H2SO4 10% to decrease pH down to 5.5. Determination of albumin quantity was done by Biuret-spectrophotometer method at 540 nm wave length with duplo for each sample aliquot. The analysis used two average test techniques of two data populations with distribution. Based on the results of the study, the albumin level of snakehead that lived in brackish water was higher than in freshwater.

ABSTRAK
Ikan gabus atau ikan kuthuk perlu dibudidayakan melalui metode rekayasa teknologi sehingga dapat meminimalisir penangkapan liar yang marak terjadi saat ini. Ikan gabus memiliki protein albumin yang lebih banyak dibandingkan dengan ikan lainnya. Sebagai sumber albumin, ikan gabus dapat dijadikan alternatif albumin yang mahal harganya. Penelitian ini bertujuan untuk mengetahui kadar albumin ikan gabus serta membandingkan antara ikan gabus air payau Kecamatan Maduran Lamongan dan air tawar Kecamatan Yosowilangun Lumajang. Metode penelitian merupakan penelitian eksperimen dengan purposive sampling dan teknik analisis uji rerata dua populasi. Penelitian ini menggunakan sampel ikan gabus. Dilakukan ulangan 3x dan masing-masing pada dua posisi cuplikan sampel daging di dekat kepala dan ekor. Pengendapan albumin menggunakan NaOH 10 % untuk menaikkan pH hingga 11,5; H2SO4 10 % untuk menurunkan pH hingga 5,5. Penentuan kuantitas albumin dikerjakan dengan metode Biuret-spektrofotometer pada panjang gelombang 540nm dengan duplo untuk setiap cuplikan sampel. Analisis menggunakan teknik uji dua rerata dari dua populasi data dengan sebaran. Berdasarkan hasil penelitian, kadar albumin ikan gabus yang hidup di air payau lebih tinggi dibandingkan dengan hidup di air tawar.
